
“Monocultivar” obtained by the “Coratina” variety of olives; cultivar prevailing in all the countryside of Andria, where it finds the best conditions to obtain the greatest results, with limy soils and systems of aid irrigation.
SENSORY PROFILE
Intense green with golden shades; it is uncontrollable in its fragrances of anet, fennel, artichoke, pepper and hay. The mouth is an abundance of vegetal tones; powerful, rich, chiselled from phenols perfectly fused in the structure, with a good taste balance. Impressing, it closes in a deliciously spicy way with long persistence of vegetable tones.
COMBINATIONS
Great flexibility in the kitchen. It will render incisive any dish thanks to a perfect balance: from country soups or grilled stockfish to grilled meats and ripe cheeses.

SENSORY PROFILE
It appears golden yellow with shining green reflexes. With regard to the scent, the varietal features of Peranzana prevail; Complete and fragrant, it offers deep and clear fragrances of tomato, rocket, radish and strong sensations of artichoke. In the mouth it fully confirms the fresh and intense olfactory notes, without exceeding in bitter and spicy tones.
COMBINATIONS
The combination on the carpaccio of sea bass is not to be missed, also the one on seafood salads. With its phenolic component it recalls dishes with sweet character that will render it optimal to define the taste of paccheri and sea urchins.
